BAKED CHICKEN WITH POTATOES AND CARROTS

Ingredients

  • 3-4 boneless, skinless chicken breasts, cut into pieces
  • 3 potatoes, peeled and cut into chunks
  • 3 carrots, peeled and cut into chunks
  • Salt and pepper to taste

Directions

Preheat oven to 325 degrees.

Line oblong baking dish with foil. Prepare chicken, potatoes and carrots and place in a single layer in the foil. Sprinkle with salt and pepper, as desired.

Fold foil and seal completely.

Bake at 325 degrees for 1 hour and 30 minutes or until done.  The size of the pieces of chicken and vegetables will determine how long to cook.
