Cut chicken into smaller pieces. I usually cut into thirds - cutting off the thinner end, then halving the thicker end so I end up with 3 thin pieces per chicken breast.
Preheat oven to 450°. Spray a large baking sheet lightly with cooking spray.
Combine breadcrumbs and parmesan cheese in a bowl. Lightly brush the chicken with olive oil, then dip into the breadcrumb mixture, coating well. Place on the baking sheet and repeat with remaining chicken.
Lightly spray the chicken with cooking spray and bake for 25 minutes.
While chicken is baking, prepare pasta per package directions.
Remove chicken from oven, spoon 1 Tbs. sauce over each piece of chicken and top each with 1 1/2 Tbs. of shredded mozzarella cheese.
Bake 5 more minutes or until cheese is melted.
Serve over angel hair pasta with extra marinara sauce as desired.
