ENGLISH PEAS WITH POTATOES AND CARROTS

Ingredients

  • 1 (15 oz.) can LeSueur Very Young Small Sweet Peas
  • 2 potatoes, quartered
  • 2 carrots, chopped
  • 2 tablespoons butter
  • Salt and pepper, to taste

Directions

Wash, peel, and chop potatoes and carrots. Place in saucepan cover with water and bring to a boil. Reduce heat and simmer for 15 to 20 minutes or until vegetables are tender.

Drain peas and rinse with cold water. Add to potatoes and carrots. Add butter and salt and pepper, as desired. Continue to simmer until peas are hot.

If too much water remains, drain slightly before serving.

NOTE: I always rinse peas before cooking. You may cook these without the carrots and potatoes if desired. Also, sometimes I heat and serve the LeSueur Very Young Small Sweet Peas with Mushrooms and Pearl Onions as a side dish.
