Wash and peel squash.
Heat olive oil on medium heat in large skillet. Do not let the oil get too hot or it will begin to “pop” out of the skillet. Slice squash and add to oil. Chop onion and add to squash. Add salt and pepper, if desired.
Cover and cook until squash is tender, stirring often. Remove cover and cook on low heat until liquid evaporates.
