HAWAIIAN WEDDING CAKE

Ingredients

HAWAIIAN WEDDING CAKE

  • 2 cups sugar
  • 2 cups flour
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 small can crushed pineapple
  • 2 teaspoons vanilla flavoring
  • 1 tablespoon rum
  • 1 cup chopped nuts (walnuts or macadamia)
  • 1 cup shredded coconut

CREAM CHEESE ICING

  • 1 stick butter
  • 1 (8 oz.) pkg. cream cheese
  • 1 ½ cup powdered sugar
  • 1 teaspoon vanilla
  • 2 teaspoons rum

Directions

HAWAIIAN WEDDING CAKE

Combine sugar and flour. Make a hole in flour mixture and pour in can of pineapple and dissolve baking soda in pineapple. Crack eggs into a separate bowl, beat  well and then stir in with flour mixture. Add vanilla, rum, nuts and coconut. Bake in greased sheet cake pan for about 35 minutes at 350 degrees. Use toothpick to test for doneness.

CREAM CHEESE ICING

Bring butter and cream cheese to room temperature. Beat until well blended and there are no cream cheese lumps. Add sugar, vanilla, rum and beat just until combined and smooth. Pour on cake in pan.
