Hobo Meal

Ingredients

  • 1.5 lbs. ground beef (I use 90% lean sirloin for this recipe)
  • 3-5 Tbs. ketchup
  • 3-5 tsp. Worcestershire sauce
  • 4 potatoes, peeled and thinly sliced
  • 3 carrots, peeled and sliced
  • onion slices
  • Salt and pepper to taste
  • heavy duty foil (18 inch wide roll)

Directions

Mix together the beef, ketchup, and Worcestershire sauce. You may need more or less ketchup and Worcestershire sauce - you just need enough to make the beef shape into patties (I mix it up just like I do when making burgers).

Tear off 3 long sections of foil. They need to be large enough to hold all of the ingredients and shape them into foil packets.

Divide the meat mixture into 3 equal portions. Place the meat onto the foil sheets and shape into patties that are about 1/4 - 1/2 inch thick. Divide the sliced potatoes, carrots, and onion evenly between the 3 packets and place on top of the meat. Season with salt and pepper if desired.

Roll up and seal the edges firmly to make a foil packet. If cooking over a camp-fire, it is best to double-wrap them in foil.

When camping, cook these over hot coals for 15 minutes; then flip over, being careful not to puncture the foil, and cook for 10 more minutes.

These can also be baked in the oven at 350 degrees for 50 minutes (the time depends on how well-done you would like your beef).
