ROASTED PECANS

Ingredients

  • 2 tablespoons oil
  • 2 tablespoons butter
  • Salt
  • 1 pound or 4 cups shelled pecan halves

Directions

Wash and drain pecan halves.

Preheat oven to 250 degrees.

Melt butter and oil in large shallow pan, such as a cookie sheet. Pan must have sides to keep the butter and oil from running out.

Spread the moist nuts in a single layer in prepared pan. Sprinkle nuts evenly with salt, allowing 2 teaspoons to 1 pound nuts, or to taste. Stir to coat nuts with the butter and oil.

Bake, stirring frequently until nuts are brown for 45 minutes to one hour. Set timer to check nuts every 15 minutes, as nuts will overcook quickly.

NOTE: May use a salt substitute.
