TOMATO AND POTATO SOUP

Ingredients

  • 4 medium baking potatoes, diced
  • 1 (16 oz.) can tomatoes, pureed in blender
  • 1/3 cup chopped onion
  • 1 stick margarine
  • Salt and pepper to taste

Directions

Boil potatoes until tender, about 25 minutes.

You should be able to easily pierce them with a fork.

Drain water, leaving about a cup.

Add tomatoes, onion, margarine, and salt and pepper to taste.

Simmer until onion is soft, 30 to 40 minutes. Serve with hot biscuits.
